Personality: Excuse me as I rip off my Gargleblasted app for this mm-kay? Going to be hitting her canon before explaining the differences the AU will entail.
Princess Bubblegum is, before anything else, the princess and ruler of the Candy Kingdom (which, despite its name, is considered a princessipality in canon.) The Candy Kingdom is one of many kingdoms and countries spread across the land of Ooo, a land full of magic and wonder that's actually the far-future of the Earth after a nuclear holocaust. (No, really, I can't make this shit up.)
She's a kind and benevolent ruler, one that's beloved to her (candy) people. She rules fairly and justly, and, by all accounts, she does a very good job managing her kingdom. Because of her skill in managing her kingdom, she also tends to organize and manage events such as symposiums, competitions, parties, and rock band tours.
But her duties as princess always comes first, and she takes those duties seriously – like, super seriously. In the episode "Burning Low," she gave a speech to Finn, a hero who often works with Princess Bubblegum as her knight, about the weight of one's duties, and how they can often demand personal sacrifice, at a time when Finn was torn between doing what's right and following his heart. It's a bit of a mix-up from the usual stereotype, since it's usually knights who follow duty above all else and the princesses who would rather follow their heart, and it's used to contrast Finn's happy-go-lucky demeanor (and perhaps naivety) to Princess Bubblegum's sense of responsibility and maturity.
As mentioned, Princess Bubblegum is kind and benevolent. She would definitely rate a "Lawful Good" alignment. She visits orphanages, helps her subjects, and always works to bettering the world. Still, when duty calls for it, when her responsibilities demand it, she's willing to bend her morals, to do something that's undeniably wrong for the greater good. At one point, her kingdom was suffering and a single man's screams were the only thing that could cure it (it's magic, okay?) She didn't even hesitate to suggest torture. That isn't to say that she enjoys it, thinks it's right, or even approves of it herself, seeing as how when the incident is resolved, she basically broke down because she knows how wrong it is. But she's also the one who suggested keeping Flame Princess, the princess of the Fire Kingdom (which is actually ruled by a king) locked in a lantern forever to keep her unstable flames from burning everything ever. Basically, she's a good person, but willing to make the tough calls for the good of the world and her subjects.
On occasion, though, Princess Bubblegum is shown to not be all candy-coated goodness, even with her subjects. For example, when stressed, she tends to eat ice cream, even if it's sapient ice cream, and sometimes eats her subjects at other times to replace lost candy biomass. They don't seem to mind, though. Much. She can hold grudges for a long time, too, as seen with both the Duke of Nuts (man, does she hate that guy – and he hasn't even done anything, really!) and Marceline (who probably did do something.)
Despite devoting so much time and effort into ruling her kingdom, Princess Bubblegum makes time for her friends and her hobbies. Her main hobby is SCIENCE~! Her skill in SCIENCE~ really can't be overstated – she's a genius, and perhaps one of the most intellectual minds in all of Ooo. She has an undying, unrelenting passion for SCIENCE~, and can most likely be found in a science lab if she's not ruling or hanging out with friends. Sometimes, her SCIENCE~ even keeps her from sleep for days, such as when she was constructing a replacement ruler out of DNA and candy, or creating the perfect sandwich (it's SCIENCE~ okay?) She believes firmly in her own skill and in the power of SCIENCE~, such as in "Lady & Peebles" when she uses SCIENCE~ to rescue Finn and Finn's dog/roommate/brother Jake. However, SCIENCE~ is a field of uncertainty at times, and while some experiments work out perfectly, some really don't, as seen in the fact that Princess Bubblegum is directly responsible for a zombie apocalypse, twice.
Also, I really like typing SCIENCE~. SCIENCE~ SCIENCE~ SCIENCE~!
As a ruler, though, Princess Bubblegum tends to be prim and proper, especially when formally engaged in princessing. (Yes, that's a word.) She also tends to expect a certain level of properness in others – while she's usually okay with Finn's childish antics, for example, she draws the line at some of the offensive remarks and actions from Marceline, the vampire queen.
But that's not the only side to her. She's always shown to have a pretty good sense of humor, and when she's hanging out with friends, she can be pretty casual and fun, too. At times like that, she dresses down, and even adopts a more casual tone. Basically, when she's not on-duty, she acts more like a normal teenager does. She's able to loosen up and have fun, chilling with friends at parties or movie nights or rock concerts, despite expectations otherwise due to her station and royalty. She enjoys spending time with her friends, especially Lady Rainicorn, her oldest and best friend, and Finn, her knight and hero. And Marceline, I guess, but that shit's getting marked as complicated on Facebook.
It's impossible to describe events important to Princess Bubblegum without mentioning the Lich. A lich is, by definition, a spellcaster who's overcome death, using dark and foul magic to keep themselves alive as an undead warlock, growing in power after death and seeking to spread evil everywhere. Well, the Lich of Ooo is worse. His very presence spreads death, his very essence is pure evil, and his only goal is the complete and utter destruction of all life everywhere. It was Princess Bubblegum's duty to watch over the Lich in his eternal prison of amber, but one day he escaped that prison.
Through a combination of bad luck, stupid people, and her eternal penchant for being kidnapped, Princess Bubblegum ended up at the site of the battle between the recently-awakened Lich and Finn, and ended up taking a dunk in the Lich's well of dark magic and radiation that almost killed her. And then she was possessed by the Lich, turned into a dark and twisted version of herself, and was then killed. She was pieced back together, but the doctor's couldn't find all of her body, so she ended up being revived as a much younger girl.
Although she eventually aged back up by absorbing candy biomass from her subjects (willingly given, I should add-) the entire ordeal led to her trying to come to terms with her own mortality. She tried to accept it, but she had trouble with it. She was afraid of dying, of leaving her subjects with nobody to lead them. She wouldn't live forever (although she would if she could.) That's what led her to creating Goliad, a ruler to take over once she was gone, one who would live forever. (It didn't turn out too well, though.)
Overall, Princess Bubblegum is a good friend, a superb scientist, and a great ruler, one who takes her duties seriously but still enjoys having fun with friends and not getting killed by the Lich. The end.
OKAY, now that's you've read over that (or stared glossy-eyed at the wall of text and scrolled down past it-) time to mention how she's different for this AU.
PB's younger here, obviously. That's not changing her much – I'm still going with older Peebs for mannerisms and skill and just about everything else. But she's not ruling! That's not changing her personality much – she's still super obsessed with being a good ruler and doing her best for her subjects, what this changes is her motivations – she does it now because she wants to prove herself as a good and just ruler, not because of the weight of leadership on her shoulders.
The differences with the fact she's a psychic is going to change some things. Although well-liked by the people, her own advisers and the royal court do not trust her. She's rather resentful of her own powers because of this, and to be honest the camp doesn't help. They put a lot of focus on how special the campers are, and PB has her own ideas for how she should be – super smart and a super good ruler, she doesn't need to be different and "special" by probing into people's minds. She doesn't have anything against others who use it, but to her, the entire thing is an absurd waste of time.
She also has a brother. He's a butt.
Okay, seriously. Princess Bubblegum is a bit of a compare and contrast to her brother. Unlike her brother, she never wants to even have a pretense of abandoning her royal duties, as he takes with the camp. And although he's smart in his own right, he often looks at psychic practice as another facet of science, whereas PB looks at it as a bunch of mumbo-jumbo that has no place as pseudoscience, let alone actual science. She loves him dearly (even if he gets on her nerves sometimes – though it's hard to find anybody who doesn't at one point or another) but she shakes her head at him sometimes and wonders which one of them is older (he is.)

AU History:
In this freaky alternate universe, the Candy Kingdom isn't quite the Candy Kingdom we all know and love. It's a small monarchy existing on a small Polynesian island a little ways off of Hawaii. It's a mecca for sugar production and scientific research, which might seem an odd combination, but it makes perfect sense in context.
It's always been a place where extremely tall breeds of sugar cane could be found. European explorers stumbled upon the island and the natives expanded their candy industry. Then the explorers tried taking over and the natives went "Oh it is on" and kicked their butts outta there. The European fashions stuck, the modern learnings were expanded on, and they kept the candy industry up. And they called themselves the Candy Isle! I dunno if they later just accepted the Candy Kingdom as their name because that Gumball guy actually came up with this AU go ask him.
Flash forward a bit. Like okay a hundred years or so. Prince Gumball and Princess Bubblegum are next in line for the throne. Gumball begins showing signs of being an insane freak (aka psychic) and the royal court doesn't seem to trust him. The current ruler still thinks highly of the kid and sends him off to Camp Psychics-only (name as come up with by six-year-old Princess Bubblegum.) PB kind of gets the approval of the royal court for not being a freak. Woot divide in royal politics over heirship! This will surely end well.
Except a few years later (by the time PB was around ten) it ends up that she's a crazy freak, too. So she gets sent to the camp with her big brother. It was also around this time that an unmentionable event occurred involving Gumball, Marshall Lee, and an undead spirit of unimaginable evil. This event further cemented the idea in Bubblegum's head that being a psychic was not cool, and also a pretty deep and meaningful fear of her own mortality. (Man, this sounds like a horrible depressing AU thing that I'd normally hate, but let's face it, this is still piddly-change compared to what she went through with the Lich in canon.)
At camp, Princess Bubblegum has taken a firm stance that she does not need to be there. She's a ruler, or at least will be – although the final fate of the throne is still in question, she doesn't doubt that she will rule, and while she fully accepts that her brother would make a capable ruler in his own right, she's fully willing to pull out any and every stop to be a great ruler... doubt can't exist in her mind for that. She thinks her time could be better spent learning the intricacies on the kingdom back home, being with her subjects and learning by doing. She wants no part in the psychic business – especially after the aforementioned incident.
In lieu of her wishes and in lieu of the events she went through, she and her brother (with some help) modified her princess's crown (tiara?) into a psychic block, of sorts. It keeps her own powers in check completely, and in addition keeps any psychic powers from touching her mind (telepathy, mostly, but also ghostly shiz.) With it, she's determined to be normal, and to keep anything from touching her mind again.
Brain World:Princess Bubblegum's brain world is a pretty weird place. It's a fun-filled medieval-style kingdom filled with sunshine, happy songs, and candy. The people are anthropomorphic candy people, the buildings are made of candy and gingerbread and cookies. It's a pretty weird place – or, perhaps, just like the Candy Kingdom from Adventure Time.
However, PB's nowhere in this happy world. Instead, juuust underneath, there's a series of old passages, a mix of abandoned dungeons, derelict subway stations, and a maze of interconnecting sewers. Nothing is down there, though, except for bones, dust, and Princess Bubblegum, trapped in a sticky mass of sucrose over top of a glowing-green pit of ancient and evil magic.
The censors in her mind vary depending on which part of her brain world you're in. In the Candy Kingdom, the censors look like candy people dressed up like business men and tend to shout things like "This is for your own good!" It's pretty much how she sees the royal court. There's also two very, very, very large censors that look like gumball machines, but don't worry about them, they only go after people who break royal promises. As for down below, the censors down there are much like the ones above, except covered in sticky sucrose-like goop, plus one very mean censor that looks like a deer with hands.
Yeah, it's a full-on Adventure Time theme, but the imagery all makes sense. Cool, right?

"Also, I was in the middle of negotiations with the local hunters about the deer infestation to the west; I have some notes on my own views, and I'd appreciate it if-"
This time, the aide interrupted her. "I thought the royal court instructed you not to get involved with that matter?"
Giving an exasperated sigh, she succinctly summarized her own views on that: "They're all poo brains. They wouldn't know how to handle a delicate situation like this if the answer was written down on a piece of paper, rolled up, and then used to smack them over the heads." She paused a moment. "Speaking of-" She reached into her bag, pulling out several sheets of paper before rolling it up and handing it to the aide. "My notes. Ensure they reach the hands of somebody who's actually qualified to handle the talks. Maybe Peppermint. If the royal court tries to get involved, you have my royal permission to use the notes to smack them upside the head." Really, she had been studying for these types of diplomatic issues since she was born. Did they really think they knew better than her?
Granted, in another kingdom, they might. But as mentioned: these ones were all poo brains. They thought she was a threat because she could talk into people's minds a little bit. Even her awesome crown didn't matter to them. Seriously?
The aide collected the offered notes and resumes taking his own. The Princess was even more of a pain than the Prince when it came to giving orders for her absence. She had already left four binders full of instructions for emergency scenarios, three binders summarizing the trade negotiations currently ongoing (which it should be mentioned she didn't even have access to,) two binders with daily orders to be carried out (every day summarized neatly by the hour, and including two extra weeks in case she was held up coming back for some reason,) and one binder about the partridge in the pear tree out back. Apparently it needed special care, or something.
Bubblegum would be pacing if she could, but she was currently strapped in, as requested by the captain of the aircraft. She glanced out of the window. "How much longer until landing?" She could see the aircraft had descended a bit.
"Not long," was the answer she got.
"All right." Giving a (royal) nod, the princess tapped her finger against the arm rest. She needed to finish soon. Once they touched down, it would be a whirlwind of movement, excitement (from her brother,) and luggage. This was all the chance she had. "What else was there...?"

In the Candy Kingdom, the censors look like candy people dressed up like business men and tend to shout things like "This is for your own good!" It's pretty much how she sees the royal court. There's also two very, very, very large censors that look like gumball machines, but don't worry about them, they only go after people who break royal promises. As for down below, the censors down there are much like the ones above, except covered in sticky sucrose-like goop, plus one very mean censor that looks like a deer with hands.
Yeah, it's a full-on Adventure Time theme, but the imagery all makes sense. Cool, right?

"I want you to ensure that the orphanage is visited at least once a month in my absence," Bubblegum insisted. The aide, a tall man wearing a traditional banana hat, gave a short nod as he made notes on his notepad. The candy-colored princess continued. "Also, I was in the middle of negotiations with the local hunters about the deer infestation to the west; I have some notes on my own views, and I'd appreciate it if-"
This time, the aide interrupted her. "I thought the royal court instructed you not to get involved with that matter?"
Giving an exasperated sigh, she succinctly summarized her own views on that: "They're all poo brains. They wouldn't know how to handle a delicate situation like this if the answer was written down on a piece of paper, rolled up, and then used to smack them over the heads." She paused a moment. "Speaking of-" She reached into her bag, pulling out several sheets of paper before rolling it up and handing it to the aide. "My notes. Ensure they reach the hands of somebody who's actually qualified to handle the talks. Maybe Peppermint. If the royal court tries to get involved, you have my royal permission to use the notes to smack them upside the head." Really, she had been studying for these types of diplomatic issues since she was born. Did they really think they knew better than her?
Granted, in another kingdom, they might. But as mentioned: these ones were all poo brains. They thought she was a threat because she could talk into people's minds a little bit. Even her awesome crown didn't matter to them. Seriously?
The aide collected the offered notes and resumes taking his own. The Princess was even more of a pain than the Prince when it came to giving orders for her absence. She had already left four binders full of instructions for emergency scenarios, three binders summarizing the trade negotiations currently ongoing (which it should be mentioned she didn't even have access to,) two binders with daily orders to be carried out (every day summarized neatly by the hour, and including two extra weeks in case she was held up coming back for some reason,) and one binder about the partridge in the pear tree out back. Apparently it needed special care, or something.
Bubblegum would be pacing if she could, but she was currently strapped in, as requested by the captain of the aircraft. She glanced out of the window. "How much longer until landing?" She could see the aircraft had descended a bit.
"Not long," was the answer she got.
"All right." Giving a (royal) nod, the princess tapped her finger against the arm rest. She needed to finish soon. Once they touched down, it would be a whirlwind of movement, excitement (from her brother,) and luggage. This was all the chance she had. "What else was there...?"
